Visit the Trinitas Tasting Room in the Estate Cave to discover these varietals that are ideal for any occasion. Trinitas Cellars 2007 Sauvignon Blanc – With fruit harvested from the Pope Valley and the Napa Valley floor, it is a perfectly balanced Sauvignon Blanc displaying aromatics of apple, green pear, honeydew melon, passion fruit, vanilla and a touch of cinnamon. Try pairing this wine with an appetizer such as fresh artichokes with mustard sauce. Trinitas Cellars 2007 Psalms – The winery’s first White Meritage. The blend consists of 58% Sémillon and 42% Sauvignon Blanc; 52% of the blend was barrel fermented in new Trust Hungarian oak. This extremely tight grained oak adds a spicy high note that lifts the green apple aromatics from the Sémillon and the tropical fruit of the Sauvignon Blanc.
